I’m just now getting to meal prep time! No worries—here’s a quick tip to keep you on track even when you don’t have time to cook.
Make a colorful, filling, and healthy salad!
For your base, use what you have: spinach, kale, lettuce, romaine
Chop up any veggies you have & pile them on: onions, mushrooms, tomatoes, peppers, celery, olives
Beans: red kidney beans, chickpeas, edamame, black beans
Toppers: crunchy peppers, hemp hearts (loaded with omegas), broccoli sprouts (SO MANY BENEFITS)
Get creative- seasoning: I use Greek seasoning or Trader Joe’s Everything But the Bagel seasoning
Dressing: apple cider vinegar (just a tiny bit goes a long way), balsamic vinaigrette (so many kinds to choose from) **stay away from creamy, rich dressings**
I put my beans in a ziplock bag and just take the bottle of dressing because I don’t want to put them on early and get my salad all mushy.
This saves you calories and money! You are more likely to eat your food instead of breaking down and eating out with your co-workers if you plan ahead.
